Cholesterylacetateisanormalhumancholesterylesterpresentindiversefluidsandorgans.Cholesterylacetateisalsopresentinfoods.FoodoxidationaffectsthequalityandsafetyofthehumandietbygeneratingcompoundswithBIOLOGicalactivitiesthatcanadverselyaffecthealth.Inparticularthesusceptibilityofcholesteroltooxidationiswellknown,certainproductsofcholesteroloxidationhavebeenreportedtoproducecytotoxic,angiotoxicandcarcinogeniceffects.Cholesterylester(CE)isthemajortransportandstorageformofcholesterolinlipoproteinparticlesandmostcelltypes.MolecularcompositionofCEspeciesisofhighinterestforarteriosclerosisresearch,i.e.,ascomponentsoflipoproteinsubclassesorinstudiesinvestigatingthemechanismsinvolvedinthegenerationoflipidladenfoamcells.Thus,ithasbeenshownthatCEspeciesincirculatingplasmaarestronglycorrelatedwithdevelopmentofcoronaryheartdisease.Cholesterylacetateisusedincosmeticsorpharmaceuticals.
